Preheat the oven to 300 F. Butter 6 ramekins. In a medium saucepan melt the butter and whisk in the flour. Cook for 2 minutes, whisking constantly. Pour in the milk and bring to a boil, whisking constantly, until thickened. Remove the pan from the heat and beat in the egg yolks one at a time. Beat the egg whites until stiff and fold them into the white sauce. Taste for seasoning. Fill each mold 1 1/4 inches full with the soufflÄ mixture. With a tablespoon make an indentation in the middle of each ramekin and break an egg into it. Fill the ramekins to the top with the remaining soufflÄ mixture. Bake for 15 minutes.
